Joel Robuchon Xmas 2011

Vegas style, something for everyone; me, bread cart with 4 different brioche.


1. L'Orange Sanguine
    emulsion of blood orange on a wild berry gel'ee

2. Le Caviar
    green asparagus with lemon balm, maki of thin couscous, salmon tartar with shiso sprouts

3. Le Matsutake
    ginger infused Matsutake tea, white truffle shavings

4. Le Gorgonzola
    custard of Gorgonzola with poached pear and sage tomatoes


5. Les Crustace's

    truffled langoustine ravioli, roasted lobster in broth, "chaud-froid" of sea urchin on fennel potato puree with anise citrus

8. La Chataigne
    light chestnut cream on lardons foam

 9. L'Os a Moelle
    bone marrow and stew of vegetables with corn and ginger

10. Le Bar
    sea bass and artchoke cooked in cocotte, barligoule jus

11. Le Canard
     duck and seared foie gras with sweet and sour fruits, grapefruit zest and cracked black pepper 

12. Le Soja
     risotto of soybean sprouts, lime and chives 

13. cheese

      layered mango variations, strawberry gelle, almond cake

15. Le Caramel
      caramel parfait, hazelnut marjolaine, chocolate sauce
